Delicatessen - Hallegård

No doubt that the Danish island of Bornholm has become a culinary Scandinavian Mecca. From the internationally acclaimed Michelin star restaurant Kadeau to world class craft beer producer Svaneke through smaller artisan producer doing everything from smoking fish to producing ice-cream. I was lucky enough to do a culinary trip in the Island and was invited by many of the local producer to document their work. One of my favourites on the island is Hallegård, a producer of Charcuterie and other wonderful delicatessen. Jørgen Christensen, the man behind the operation has been quietly and methodically doing his thing for years and in recent years has started to get the recognition he deserves while his products are being sold all over the place.
